2 lb ground beef
2 cloves garlic, chopped
1 onion, diced
1 green bell pepper, diced
14 ½ oz crushed tomatoes
2 tbsp chili powder
1 tsp ground cumin
1 tsp ground oregano
1 tsp salt
¼ tsp cayenne pepper
¼ cup corn mesa (optional)
1 can (15 oz) kidney beans, drained and rinsed
1 can (15 oz) pinto beans, drained and rinsed
Shredded cheddar cheese, for serving
Corn chips, for serving
Chopped red onion, for serving
Avocado, for serving
Instructions
Break up freeze dried ground beef contents and add to a large bowl.
Add enough cool water to cover meat (roughly 2-3 cups.) Let sit for 5-10 minutes or until fully hydrated and soft to the touch.
Once meat is prepared, place it in a large pot. Add garlic and cook over medium high heat until browned.
Once brown, add chopped onion and bell pepper. Sauté until soft (about 2 min.)
Drain off the excess fat. Add tomatoes, chili powder, cumin, oregano, salt and cayenne. Stir together, cover and reduce heat to low. Simmer for 1 hour, stirring occasionally.
(Optional) After an hour, add the corn mesa to a small bowl with 1/2 cup of water. Stir together and then add mixture to the pot.
